Ingredients

  2. carrot - 1
  3. zucchini - 1
  4. red hot pepper - 1
  5. green hot pepper - 1
  6. yellow hot pepper - 1
  7. bell pepper - 1
  8. white onions or red onions - 2 (extra quantity)
  9. garlic - 6 cloves
  10. salt - to taste (pinch)
  11. oil - as needed (for frying and greasing)
  12. black pepper - to taste
  13. garlic powder - to taste
  14. onion powder - to taste
  15. optional broth - to taste
  16. hawawshi spices - 1 tablespoon
  17. flour - 1 cup (for dough)
  18. milk - 1 cup (for dough)
  19. eggs - 2 (for dough)
  20. mozzarella cheese - as needed
  21. thyme - as needed (for topping)

Instructions

  1. Prepare Vegetables: Grate the potato, carrot, and zucchini. Chop onions, bell pepper, hot peppers, and garlic in a food processor. Salt the vegetables to draw out moisture and leave to drain.
  2. Cook Vegetables: In a pan, heat oil and sauté onions, garlic, and peppers until soft. Add the grated vegetables and cook for 5 minutes. Season with salt, black pepper, garlic powder, onion powder, optional broth, and hawawshi spices.
  3. Prepare Dough: Mix flour, milk, and eggs to create a dough similar to crepe batter.
  4. Combine and Bake: Combine the vegetable mixture with the dough. Spread on a greased baking tray and bake in a preheated oven at 200°C (392°F) for 5-10 minutes. Top with mozzarella cheese and thyme, then grill until cheese is melted and golden.
  5. Serve: Serve hot as breakfast, lunch, dinner, or a snack.
