Ingredients

  1. tuna - 320 g (canned in water)
  2. quinoa - 200 g (uncooked)
  3. tomato - 1 (diced)
  4. cucumber - 1 (diced)
  5. onion - 1 (chopped)
  6. spring onions - 2 (green part only)
  7. parsley - 1/2 bunch (chopped)
  8. Diosmos - 1/4 bunch (chopped)
  9. olive oil - 60 g (for dressing)
  10. balsamic vinegar with mango - 4 tablespoons (for dressing)
  11. lemon - 1 (zest)
  12. salt - watch the video to see (to taste)
  13. pepper - watch the video to see (to taste)

Instructions

  1. Cook Quinoa: In a pot of boiling water, add quinoa and salt. Boil for 15 minutes.
  2. Prepare Vegetables: Chop onion, spring onions, cucumber, and tomato. Place in a bowl.
  3. Marinate Vegetables: Add salt, pepper, olive oil, and balsamic vinegar to the bowl and mix.
  4. Combine Ingredients: Strain quinoa and add to the bowl with vegetables. Add chopped parsley and Diosmos.
  5. Add Lemon Zest: Mix in lemon zest and adjust seasoning as needed.
  6. Serve: Transfer to a platter, top with drained tuna, and serve with extra olive oil and pepper.
