Ingredients

  1. water - watch the video to see (enough to fill a pot for boiling)
  2. lemongrass - 1 stalk (whole stalk, bruised and cut into pieces)
  3. pandan leaves - 2-3 leaves (cut into small pieces, fresh or frozen)
  4. honey or sweetener - watch the video to see (optional, to taste)

Instructions

  1. Boil Water: Add water to a pot or saucepan and bring to a rolling boil over high heat.
  2. Prepare Lemongrass and Pandan Leaves: Bruise the whole lemongrass stalk using the back of a knife or a smasher, then cut into pieces. Cut pandan leaves into small pieces.
  3. Add Herbs to Boiling Water: Add the bruised lemongrass and pandan leaves to the boiling water.
  4. Simmer: Reduce heat to medium-low and let the mixture simmer for about 10 minutes or until the water changes to a yellowish-green color.
  5. Strain and Serve: Turn off the heat and strain the tea using a strainer. Serve hot or let cool and add ice to serve cold. Optionally, add honey or your preferred sweetener.
