cornstarch - 3 tablespoons (for velveting and sauce thickening)
white vinegar - 1/3 cup
light soy sauce - 1 tablespoon
white sugar - 1/3 cup
worcestershire sauce - 1 teaspoon
oyster sauce - 1 teaspoon
ketchup - 1/4 cup
pineapple juice - 1/4 cup
fresh ginger - 1/2 inch piece (grated)
garlic - 1 clove (grated)
onion - 1/2 cup (chopped)
red bell pepper - 1/2 cup (chopped)
green bell pepper - 1/2 cup (chopped)
pineapple - 1/2 cup (chopped)
Instructions
Velvet Pork: Combine pork with vegetable oil, dark soy sauce, and 1 tablespoon cornstarch. Marinate for 30 to 60 minutes.
Prepare Sauce: Mix white vinegar, light soy sauce, sugar, Worcestershire sauce, oyster sauce, ketchup, pineapple juice, ginger, and garlic. Thicken with cornstarch slurry as needed.
Stir Fry: Sear velvety pork in a hot wok, add vegetables and pineapple, then the sauce. Cook until pork is done and vegetables are tender. Serve with steamed rice.
