Instructions

  1. Prepare the Chicken: Cut chicken into finger-length pieces. Season with a pinch of salt, cooking wine, white pepper, and a little sugar to enhance umami and retain moisture.
  2. Marinate Chicken: Mix the chicken well with the seasonings and leave aside for 20 to 30 minutes.
  3. Prepare the Batter: Mix three parts flour to one part cornstarch, add baking powder, an egg, and a little white vinegar. Adjust the consistency with water, then add cooking oil to the batter and leave it to rest for 20 to 30 minutes.
  4. Fry the Chicken: Coat the chicken in batter. Fry at 280~300°F (130~140°C) until they float and are golden brown. For extra crispiness, fry twice, with the second frying at 350°F (180°C).
  5. Prepare the Sweet and Sour Sauce: Sauté onions and shallots in cooking oil, add tomato paste and water, season with salt and rock sugar. Add hawthorn slices or strawberry jam, Worcestershire sauce, and thicken with potato starch slurry.
  6. Combine Chicken and Sauce: Add fried chicken to the sauce along with green and red peppers, ensuring each piece is well coated.
  7. Serve: Serve the sweet and sour chicken hot, ideal with rice or wine.
