Ingredients

  1. boiling water - watch the video to see (as required for blanching peaches)
  2. peaches - 3 medium (500g) (medium sized, peeled and deseeded)
  3. condensed milk - 350 ml (1 ½ cups) (sweetened condensed milk)
  4. ice cubes - as required (for chilling peaches and ice bath)
  5. cream - 400 ml (chilled heavy cream)
  6. chocolate chips - ½ cup or as required (semi-sweet or milk chocolate chips)

Instructions

  1. Blanch Peaches: Add peaches to boiling water and blanch for 3 minutes.
  2. Chill and Peel: Remove peaches from boiling water and immediately transfer to ice chilled water for 2-3 minutes. Peel and deseed the peaches.
  3. Prepare Peach Puree: In a blender jug, add peeled peaches and condensed milk. Blend well and set aside.
  4. Beat Cream: In a large bowl placed over a bowl of ice cubes, add chilled cream and beat well until slightly thickened.
  5. Combine Puree and Cream: Add the prepared peach puree to the beaten cream and beat until well combined.
  6. Add Chocolate Chips: Gently fold in the chocolate chips into the cream mixture.
  7. Freeze: Transfer the cream mixture into an ice cream mold, cover with cling film, and freeze for 8-10 hours or overnight.
  8. Serve: Scoop out the frozen peach ice cream and serve.
