Prepare Ingredients: Have all ingredients and seasonings measured out and ready. Blanch noodles as needed.
Heat Oil: Heat a bit of oil in the wok until smoking.
Cook Sausage: Add sliced sausage to render a bit.
Add Vegetables: Add julienned carrots and other vegetables of choice, including snow peas. Keep tossing to avoid aggressive coloring.
Add Noodles: Add the blanched noodles, rocking the wok forwards and backwards for constant movement.
Season: Add a little more oil, MSG, and salt. Constantly toss to avoid any coloring.
Add Liquid Seasonings: Introduce light soy sauce, wine, and oyster sauce by adding them to the edge of the pan to cook down a bit.
Finish with Scallions: Add chopped scallions at the very end just to wilt them slightly.
Serve: Serve the stir-fried noodles hot.
