Ingredients

  1. oil - as needed (for frying)
  2. sausage - watch the video to see (sliced)
  3. carrots - watch the video to see (julienned)
  4. vegetables - watch the video to see (of choice)
  5. snow peas - watch the video to see
  6. noodles - watch the video to see (blanched)
  7. MSG - to taste (optional)
  8. salt - to taste
  9. light soy sauce - watch the video to see
  10. wine - watch the video to see (for cooking)
  11. oyster sauce - watch the video to see
  12. scallions - watch the video to see (chopped)

Instructions

  1. Prepare Ingredients: Have all ingredients and seasonings measured out and ready. Blanch noodles as needed.
  2. Heat Oil: Heat a bit of oil in the wok until smoking.
  3. Cook Sausage: Add sliced sausage to render a bit.
  4. Add Vegetables: Add julienned carrots and other vegetables of choice, including snow peas. Keep tossing to avoid aggressive coloring.
  5. Add Noodles: Add the blanched noodles, rocking the wok forwards and backwards for constant movement.
  6. Season: Add a little more oil, MSG, and salt. Constantly toss to avoid any coloring.
  7. Add Liquid Seasonings: Introduce light soy sauce, wine, and oyster sauce by adding them to the edge of the pan to cook down a bit.
  8. Finish with Scallions: Add chopped scallions at the very end just to wilt them slightly.
  9. Serve: Serve the stir-fried noodles hot.
