  7. cornstarch - 2 tsp
  8. water - 2 tbsp (for sauce)
  9. oyster sauce - 1 tsp
  10. sugar - 1 tsp
  11. cooking oil - 1 tsp + 1 tbsp + 1 tbsp (for blanching and stir-frying)

Instructions

  1. Prepare the Broccoli: Wash the broccoli in salt water, then cut into florets and slice the stems thinly.
  2. Prepare Aromatics: Smash, peel, and mince the garlic. Slice, smash, and mince the ginger.
  3. Make the Sauce: Combine 1/2 tsp salt, 1 tsp sugar, 1 tbsp cooking wine, 1 tsp chicken bouillon powder, 2 tsp cornstarch, 2 tbsp water, and 1 tsp oyster sauce.
  4. Blanch the Broccoli: Blanch the broccoli stems first, then the florets in boiling water with 1 tbsp salt and 1 tsp oil. Transfer to an ice bath.
  5. Stir-fry: Heat oil in a wok, bloom the garlic and ginger, add the broccoli, and stir-fry with a splash of wine. Add the sauce, finish with a tbsp of oil, and serve.
