Ingredients

  1. chicken breast - 2 (two big chunks)
  2. onion flakes - to taste
  3. white pepper - to taste
  4. mixed seasonings - to taste
  5. rosemary - to taste (fresh)
  6. thyme - to taste (fresh)
  7. lemon - 1 (sliced)
  8. cooking oil - as needed (for pan-searing)

Instructions

  1. Marinate the Chicken: Season the chicken breasts with onion flakes, white pepper, mixed seasonings, rosemary, thyme, and a slice of lemon. Rub the seasoning in well.
  2. Vacuum Seal the Chicken: Transfer the marinated chicken into a vacuum bag, cut off any excess bag length, and vacuum seal it.
  3. Sous Vide Cooking: Fill a pot with water and set the sous vide cooker to 145°F (62.8°C). Cook the chicken for 1 hour and 15 minutes.
  4. Pan Sear (Optional): After sous vide cooking, optionally pan sear the chicken in a skillet with some oil for external crispiness and browning.
  5. Serve: Remove the chicken from the vacuum bag, discard the herbs and lemon used for seasoning, and serve.
