Instructions

  1. Prepare fish slices: Slice red snapper fillets and marinate with salt, mirin, and sake. Set aside.
  2. Make soup stock: In a large pot, combine water, kombu, bonito flakes, and toasted ikan bilis. Bring to a simmer to extract flavors.
  3. Cook soup: Remove kombu before boiling. Add marinated fish slices to the stock and cook until fish is done.
  4. Prepare accompaniments: Cook thick beehoon noodles according to package instructions. Prepare romaine lettuce and tomatoes.
