Ingredients

  1. salmon fillet - 300 g (300 g)
  2. balsamic cream with honey - 3 tablespoons (3 tablespoons)
  3. olive oil - 2-3 tablespoons (2-3 tablespoons)
  4. lime - 2 (zest and juice of 2)
  5. salt - watch the video to see (to taste)
  6. pepper - watch the video to see (to taste)
  7. zucchini - 2 (2, sliced)
  8. eggplant - 1/2 (1/2, sliced)
  9. Florina pepper - 1 (1, chopped)
  10. pleurotus mushrooms - 200 g (200 g)
  11. plugouri - 100 g (100 g)
  12. hot water - 200 g (200 g)
  13. red pepper - 1/3 (1/3, chopped)
  14. spring onion - 1 (green part, chopped)
  15. parsley - 1/4 bunch (1/4 bunch, chopped)

Instructions

  1. Prepare Plugouri: In a bowl, combine plugouri, olive oil, salt, pepper, and hot water. Set aside.
  2. Make Marinade: In another bowl, mix olive oil, balsamic cream, lime zest and juice, salt, and pepper.
  3. Marinate Salmon: Carve the salmon and add it to the marinade.
  4. Prepare Vegetables: Chop zucchini, bell pepper, and eggplant. Add to the marinade.
  5. Air Fry: Place salmon in the center of the air fryer basket and surround with vegetables. Cook at 200° for 20 minutes.
  6. Serve: Cut the salmon in half and serve with roasted vegetables and parsley.
