Ingredients

  5. olive oil - 2 tablespoons (for roasting)
  6. paprika powder - 1 tablespoon (for flavor)

  9. quinoa - 2 cups (rinsed)
  10. water - 2 cups (for cooking quinoa)
  11. chickpeas - 1 cup (cooked or canned)
  12. coriander - a handful (chopped)
  13. cumin powder - 2 tablespoons (for flavor)
  14. lemon juice - 2 tablespoons (for dressing)
  15. olive oil - 1/3 cup (for dressing)

Instructions

  1. Steam Tempeh: Cut tempeh into pieces and steam for 7 minutes.
  2. Marinate Tempeh: Combine soy sauce, vinegar, maple syrup, olive oil, paprika, salt, and pepper in a bowl, then mix with steamed tempeh and let rest for 30 minutes.
  3. Roast Tempeh: Spread marinated tempeh on a baking sheet and roast in a preheated oven at 190°C for 25 minutes.
  4. Cook Quinoa: In a pot, combine rinsed quinoa and water, bring to a boil, then cover and let sit for 10 minutes.
  5. Prepare Salad Ingredients: Halve cherry tomatoes and chop coriander. Rinse arugula.
  6. Combine Salad: In a bowl, mix quinoa, chickpeas, coriander, cumin, lemon juice, and olive oil.
  7. Assemble Salad: Pack quinoa salad in a container, top with cherry tomatoes, arugula, and roasted tempeh.
