Ingredients

  1. pasta - 1 cup (cooked)
  2. cucumber - 1 cup (chopped)
  3. cherry tomato - 1 cup (halved)
  4. red onion - 1/2 cup (sliced)
  5. cottage cheese - 1/2 cup (used instead of feta)
  6. parsley - 1/4 cup (chopped)
  7. olive oil - 1/4 cup (for dressing)
  8. red vinegar - 2 tbsp (for dressing)
  9. dijon mustard - 1/2 tsp (for dressing)
  10. oregano - 1 tsp (dried, for dressing)
  11. lemon juice - 1 tbsp (fresh, for dressing)
  12. salt - 1/2 tsp (for dressing)

Instructions

  1. Prepare Salad Ingredients: Cook pasta and let it cool. Chop cucumber, halve cherry tomatoes, slice red onion, and chop parsley.
  2. Make Dressing: Combine olive oil, red vinegar, dijon mustard, oregano, lemon juice, salt, and black pepper in a small jar. Shake well to mix.
  3. Assemble Salad: In a bowl, mix cooked pasta, cucumber, cherry tomatoes, red onion, parsley, and cottage cheese.
