  2. onion - 1
  3. garlic cloves - 3 (finely grated)
  4. dried tomatoes - 50g (marinated in oil, chopped)
  5. olive oil - 3 tablespoons
  6. butter - 15g
  7. thick cream - 1 tablespoon (30% fat)
  8. Dijon mustard - 1 tablespoon
  9. tomato concentrate - 1/2 tablespoon
  10. parsley or basil - to taste (for garnish)
  11. grated Parmesan - to taste
  12. chicken stock - 40cl
  13. flour - as needed (for dusting)
  14. salt - to taste
  15. pepper - to taste

Instructions

  1. Prepare Chicken: Season chicken thighs with salt and pepper, then dust with flour on both sides.
  2. Brown Chicken: In a large frying pan, heat olive oil and butter over medium heat. Add chicken skin-side down and cook for 4-5 minutes on each side until golden. Remove and set aside.
  3. Sauté Onions and Garlic: In the same pan, add finely chopped onions and sauté for 4-5 minutes. Add grated garlic and tomato concentrate, cook for a few seconds then mix.
  4. Make Sauce: Add dried tomatoes and chicken stock to the pan. Season with salt and bring to a simmer. Stir in thick cream and Dijon mustard until well combined. Add a little more broth if needed.
  5. Finish the Dish: Return chicken to the pan, cover with sauce, and let it simmer for a few minutes. Garnish with parsley or basil and sprinkle with grated Parmesan before serving.
