Ingredients

  1. onions - 4 (grated)
  2. tomatoes - 2 (grated and skin removed)
  3. boiled potatoes - 3 (cut into pieces)
  4. ginger - 1.5 inch (1.5 inch piece)
  5. garlic - watch the video to see (to taste)
  6. green chillies - 2 (chopped)
  7. mustard oil - watch the video to see (for frying)
  8. cinnamon - 1 (whole piece)
  9. cumin seeds - 1 teaspoon (whole)
  10. cloves - 2 (whole)
  11. green cardamoms - 2 (whole)
  12. thick cardamoms - 2 (whole)
  13. salt - watch the video to see (to taste)
  14. red chili powder - 1/2 teaspoon (to taste)
  15. turmeric powder - 1/2 teaspoon (to taste)
  16. Kashmiri red chili powder - 1 teaspoon (to taste)
  17. hot water - 3 glasses (for cooking)

Instructions

  1. Prepare Ingredients: Grate the onions and tomatoes, and chop the ginger, garlic, and green chillies.
  2. Heat Oil: In a pan, heat mustard oil and add the whole spices (cinnamon, cumin seeds, cloves, green cardamoms, thick cardamoms).
  3. Fry Onions: Add the grated onions and fry for 6-7 minutes on medium heat.
  4. Add Ginger, Garlic, and Chillies: Add chopped ginger, garlic, and green chillies, and fry for 2-3 minutes.
  5. Add Tomatoes: Add the grated tomatoes and roast for 5-6 minutes.
  6. Add Dry Spices: Lower the heat and add salt, red chili powder, turmeric powder, and Kashmiri red chili powder.
  7. Add Water: Add half a cup of hot water and cook for 6-7 minutes, adding more water if necessary.
  8. Add Boiled Potatoes: Add the boiled potato pakoras and roast in the spice mixture for 4-5 minutes.
  9. Cook with Water: Add 3 glasses of hot water, cover, and let it cook for 15-20 minutes on medium heat.
  10. Finish and Serve: Once cooked, add green coriander, turn off the heat, and serve with rice or roti.
