Prepare Ingredients: Grate the onions and tomatoes, and chop the ginger, garlic, and green chillies.
Heat Oil: In a pan, heat mustard oil and add the whole spices (cinnamon, cumin seeds, cloves, green cardamoms, thick cardamoms).
Fry Onions: Add the grated onions and fry for 6-7 minutes on medium heat.
Add Ginger, Garlic, and Chillies: Add chopped ginger, garlic, and green chillies, and fry for 2-3 minutes.
Add Tomatoes: Add the grated tomatoes and roast for 5-6 minutes.
Add Dry Spices: Lower the heat and add salt, red chili powder, turmeric powder, and Kashmiri red chili powder.
Add Water: Add half a cup of hot water and cook for 6-7 minutes, adding more water if necessary.
Add Boiled Potatoes: Add the boiled potato pakoras and roast in the spice mixture for 4-5 minutes.
Cook with Water: Add 3 glasses of hot water, cover, and let it cook for 15-20 minutes on medium heat.
Finish and Serve: Once cooked, add green coriander, turn off the heat, and serve with rice or roti.
