Ingredients

  1. olive oil - 4 tablespoons (for sautéing)
  2. onion - 1 medium (chopped)
  3. garlic - 1 tablespoon (chopped)
  4. tomatoes - 4 medium (chopped)
  5. fresh basil leaves - 8-10 leaves plus extra for garnish (for cooking and garnish)
  6. water - 1 cup (or as required)
  7. paprika powder - 1 teaspoon
  8. dried oregano - 1 teaspoon
  9. black pepper powder - 1/2 teaspoon
  10. salt - 1/2 teaspoon (or to taste)
  11. red chili crushed - 1/2 teaspoon
  12. chicken powder - 1 tablespoon
  13. milk - 1 cup
  14. cream - 1/2 cup
  15. cheddar cheese - 1/2 cup (grated)
  16. mozzarella cheese - 1/2 cup (grated)
  17. spaghetti - 300 grams (boiled with salt as per pack’s instruction)

Instructions

  1. Sauté aromatics: In a wok, heat olive oil, add chopped onion and garlic, mix well and sauté until onions are translucent.
  2. Cook tomatoes and basil: Add chopped tomatoes and fresh basil leaves, mix well and cook for 2-3 minutes.
  3. Simmer and blend: Add water, mix well, cover and cook on low flame for 4-5 minutes. Then blend well with a hand blender.
  4. Add spices: Add paprika powder, dried oregano, black pepper powder, salt, crushed red chili, and chicken powder. Mix well and cook for a minute.
  5. Add dairy: Add milk and cream, mix well and cook for 2-3 minutes.
  6. Add cheeses: Add grated cheddar and mozzarella cheese, mix well.
  7. Combine with spaghetti: Add boiled spaghetti and mix well.
  8. Garnish and serve: Garnish with fresh basil leaves and serve hot.
