  2. butter - 2 tablespoons (for stir-frying)
  3. garlic - 2 cloves (minced)
  4. shallots - 2 small (chopped)
  5. scallions - 2 stalks (bottom part, chopped)
  6. carrots - 1/2 cup (chopped)
  7. prawns - 100 grams (peeled and deveined)
  8. frozen peas - 1/4 cup (thawed)
  9. fish sauce - 1 tablespoon (for seasoning)
  10. oyster sauce - 1 tablespoon (for seasoning)
  11. pineapple chunks - 1 cup (fresh, chopped)
  12. curry powder - 1 teaspoon (for flavor)
  13. turmeric powder - 1/2 teaspoon (for color)

Instructions

  1. Prepare the rice: Use cooked rice that has been refrigerated overnight or freshly cooked rice left aside for about an hour to reduce moisture.
  2. Sauté aromatics: Heat butter in a wok or large pan over medium heat. Add minced garlic and chopped shallots, stir-fry until fragrant.
  3. Add scallions and vegetables: Add the bottom parts of scallions and chopped carrots. Increase heat to maximum to evaporate moisture quickly.
  4. Cook prawns and peas: Add prawns and thawed frozen peas. Stir-fry quickly on high heat.
  5. Add rice and seasonings: Add the cooked rice and stir well. Season with fish sauce, oyster sauce, curry powder, turmeric powder, salt, and black pepper. Mix thoroughly to coat the rice evenly.
  6. Add pineapple chunks: Add fresh pineapple chunks and stir-fry briefly to combine the sweetness with the savory flavors.
  7. Cook the egg: Add a bit of vegetable oil to the pan and push the rice to one side. Pour the beaten egg into the empty side and scramble it gently. Once cooked, mix the egg into the rice.
