Ingredients

  10. mirin - 1/4 cup (for marinade)

Instructions

  1. Prepare the Rice: Rinse sushi rice thoroughly and soak in water for 30 minutes.
  2. Make the Marinade: In a saucepan, combine sesame oil, 1 1/2 tablespoons of soy sauce, kosher salt, koshugu, freshly grated ginger, sugar, sake, and mirin. Bring to a simmer.
  3. Simmer Marinade: Add 3 tablespoons of soy sauce to the marinade and continue to simmer for 10 minutes.
  4. Cook the Shrimp: Steam the shrimp for 2 minutes or until cooked through.
  5. Marinate the Shrimp: Toss the cooked shrimp in the marinade.
  6. Assemble the Bowl: Plate the brown sushi rice and arrange the shrimp, kimchi, edamame, green scallions, and sesame seeds on top.
  7. Finish with Sauces: Drizzle with unagi sauce and add pickled ginger in the center.
