Ingredients

  1. basmati rice - 300g
  2. butter or sunflower oil - 30g or 2 tbsp
  3. large onion - 1 (chopped)
  4. cinnamon stick - 1
  5. cumin seeds - 1 tsp
  6. cardamom pods - 6 (bashed)
  7. garlic cloves - 4
  8. bay leaves - 2
  9. ground coriander - 1/2 tsp
  10. ground turmeric - 1/2 tsp
  11. vegetable stock or water - 500ml

Instructions

  1. Prepare Rice: Soak rice in cold water for 30 minutes, then rinse until water runs clear and drain.
  2. Cook Spices: Heat butter or oil in a pan, fry onion with salt until soft. Add whole spices and bay leaf, cook for 2 minutes. Add ground coriander and turmeric, cook for 1 minute.
  3. Cook Rice: Stir in drained rice, then pour in stock or water and mix well. Cook until rice is tender and liquid is absorbed.
