Ingredients

  1. shrimp - watch the video to see (fresh, with or without shells and heads)
  2. salt - to taste (to season)
  3. black pepper - to taste (to season)
  4. olive oil - about 1 tablespoon (a dash for frying)
  5. butter - about 1 tablespoon (added after flipping shrimp)
  6. thyme - a few sprigs (fresh herb, can be substituted)
  7. lemon - about 1 teaspoon (a little juice for finishing)

Instructions

  1. Clean the shrimp: Twist off the head and peel the shells and legs gently. Save shells and heads for broth if desired. Make a delicate cut on top of the shrimp to remove the intestines and roe using a knife or a toothpick if shells are kept.
  2. Season the shrimp: Season cleaned shrimp with salt and black pepper.
  3. Heat the pan: Heat a frying pan over medium heat and add a dash of olive oil.
  4. Grill the shrimp: Place shrimp in the pan, grilling both with shells and without. Cook for about 40 seconds on each side. For shrimp with shells, cook slightly longer until the outside becomes iridescent.
  5. Add butter, thyme, and lemon: After flipping the shrimp, add butter, thyme, and a little lemon juice. Lightly baste the shrimp with the melted butter mixture.
  6. Serve: Remove from heat and serve immediately for the best flavor and texture.
