Instructions

  1. Prepare the Meat: Make shallow cuts in the fat of the meat without cutting into the meat itself.
  2. Sear the Meat: Place the meat fat-side down in a cold pan. Sear the fat until it starts to fry, then sear the meat on all sides.
  3. Prepare the Marinade: Using a hand blender, blend garlic, rosemary, sage, thyme, extra virgin olive oil, and black pepper to create the marinade.
  4. Marinate the Meat: Marinate the seared meat with the freshly prepared herb and garlic marinade.
  5. Roast the Meat: Preheat the oven to 90 degrees Celsius (194 degrees Fahrenheit) with hot air. Place the marinated meat in the middle of the oven and roast for about an hour and a half.
  6. Rest the Meat: After roasting, let the meat rest for 20 to 30 minutes without covering it.
