Ingredients

  1. granulated sugar - 400g (for syrup)
  2. water - 300g (for syrup)
  3. glucose - 1 tablespoon (for syrup)
  4. cinnamon stick - 1 (for syrup)
  5. pastry sheets - 450g (for sweets)
  6. butter - 150g
  7. roasted pistachios - 100g (from Aegina, for serving)

Instructions

  1. Prepare Syrup: Boil sugar, water, glucose, and cinnamon. Set aside to cool.
  2. Prepare Pastry: Roll pastry sheets, cut to fit the baking tray. Butter each layer and roll.
  3. Bake: Bake at 150°C for 30 minutes until crispy.
  4. Syrup the Zucchini: Pour cooled syrup over hot zucchini immediately after baking.
  5. Serve: Cut into pieces and serve sprinkled with roasted pistachios.
