Ingredients

  1. granulated sugar - 400 g
  2. water - 300 g
  3. glucose - 1 tablespoon (one tablespoon)
  4. cinnamon stick - 1
  5. pastry sheets for sweets - 450 g
  6. butter - 150 g
  7. roasted peanuts - 100 g (for serving)

Instructions

  1. Prepare the syrup: In a saucepan over high heat, combine the sugar, water, glucose, and cinnamon stick. Let the mixture come to a boil, then remove from the heat and set aside to cool.
  2. Melt the butter: Put the butter in cubes, cover with cling film, and transfer to the microwave to melt. Alternatively, melt it in a saucepan.
  3. Prepare the pastry sheets: Roll the pastry sheets and place them on top of the baking tray. Cut off the excess edge. Open them, fold twice, cut into folded strips and place them in a baking tray with the seam facing down. Repeat until the baking tray is full.
  4. Bake: Brush the entire surface with melted butter using a spoon. Transfer to the oven and bake at 150°C for 1½ hours until crispy.
  5. Syrup the kurkubinia: Immediately after removing from the oven, syrup the hot dessert with the cold syrup, allowing it to absorb fully.
  6. Serve: Cut into pieces if needed, place in a serving bowl, and optionally sprinkle with roasted peanuts before serving.
