Ingredients

  1. pecan nuts - 200g (chopped or whole)
  2. almonds - 200g (chopped or whole)
  3. cocoa powder - 45g (unsweetened)
  4. salt - pinch (pinch)
  5. Medjool dates - 18 (pitted)
  6. warm water - 1/2 cup (to blend dates)
  7. vanilla bean paste - 1 tsp (for flavor)
  8. dark chocolate - 90g (melted, for cake mixture)
  9. dark chocolate - 90g (melted, for decorating)

Instructions

  1. Prepare nuts: Place pecan nuts and almonds into a food processor and pulse until finely chopped but not powdered.
  2. Blend dates and wet ingredients: In a separate bowl, soak pitted Medjool dates in warm water for a few minutes to soften. Then blend with vanilla bean paste until smooth.
  3. Combine dry and wet ingredients: Add cocoa powder, pinch of salt, and melted dark chocolate to the nut mixture. Pour in the date and vanilla paste mixture and blend all ingredients together until a sticky dough forms.
  4. Form the cake: Press the mixture firmly into a 7-inch cake tin, smoothing the top evenly.
  5. Chill and decorate: Refrigerate the cake for several hours or overnight to set. Before serving, drizzle with melted dark chocolate and decorate with mixed fresh berries.
