Ingredients

  1. all-purpose flour - 300g
  2. fine semolina - 200g (plus extra for sprinkling)
  3. salt - 12g
  4. sugar - 8g
  5. instant dried yeast - 4g
  6. tepid water - 300ml
  7. vegetable oil - 50g (for drizzling and greasing)
  8. melted butter - 50g (for drizzling)

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the all-purpose flour, fine semolina, salt, sugar, and instant dried yeast.
  2. Add Water and Knead: Gradually add the tepid water to the dry ingredients, mixing until a dough forms. Knead the dough for about 10 minutes until it's smooth and elastic.
  3. Oil and Form Balls: Drizzle vegetable oil over the dough and give it a little rub. Then, grab handfuls of dough, form into balls, and place them on a plate. Drizzle more oil over the balls to prevent sticking.
  4. Rest the Dough: Cover the dough balls with a cloth and let them rest for 15 minutes.
  5. Shape the Pancakes: On an oiled surface, flatten a dough ball as thin as possible without tearing it. Rub melted butter over the surface, sprinkle with semolina, and fold into a square, adding butter and semolina between the layers.
  6. Cook the Msemen: Heat a pan over medium-high heat with a little oil. Place the square dough in the pan and cook until golden brown on both sides.
  7. Serve: Serve the msemen hot, drizzled with honey if desired.
