  5. chicken breasts - 2 small (small size, chopped)

Instructions

  1. Prepare Roasted Salsa: Roast 4 tomatoes, 1 onion, 2 garlic cloves, and 4 chili peppers until cooked and slightly charred. Let cool slightly.
  2. Grind Salsa Ingredients: Grind the roasted tomatoes, onion, garlic, and chili peppers to make the salsa.
  3. Cook Chicken: Chop the 2 small chicken breasts into pieces. Heat oil in a pot on the griddle. Add chicken with salt and black pepper. Brown the chicken while stirring.
  4. Add Vegetables to Chicken: Add 2 onions (chopped), 3 tomatoes (chopped), 1 chili pepper (chopped), and 2 garlic cloves to the chicken. Season with salt and cook until chicken is fully browned and vegetables are softened.
  5. Blend Additional Salsa: Blend additional tomatoes and chili peppers as desired to complement the cooked chicken mixture.
  6. Warm Tortillas: Heat a small amount of oil in a pan and quickly warm the corn tortillas with a light pass on each side.
  7. Assemble Tacos: Place cooked chicken mixture on warmed tortillas, add a handful of melted cheese, fold the tacos, and optionally add salsa on top.
