Ingredients

  3. salt - 6-7 g (for meatballs and sauce)
  4. crustless toast bread - 100 g (for meatballs, processed)
  5. garlic - 1 clove (clove, for meatballs)
  6. parsley - 2 tablespoons (fresh, chopped, for meatballs)
  7. dried oregano - 1 teaspoon total (0.5 tsp each) (for meatballs and sauce)
  8. onion - 0.5 medium (half, grated for meatballs and sauce)
  9. egg - 1 (medium, for meatballs binding)
  10. olive oil - 6 tablespoons total (4 tbsp for frying, 2 tbsp for sauce) (for meatballs frying and sauce)
  11. butter - 1 tablespoon (for frying meatballs)
  12. pepper - watch the video to see (freshly ground, to taste)
  13. grated tomatoes - 500 g (for tomato sauce)
  14. granulated sugar - 1 teaspoon (for tomato sauce)
  15. fresh basil - 2 tablespoons chopped + 12 leaves for sandwich (for tomato sauce and garnish)
  16. ciabatta bread - 5 pieces (for sandwiches)
  17. grated parmesan - 5 tablespoons (for topping sandwiches)
  18. mozzarella - 250 g (sliced, for sandwiches)

Instructions

  1. Prepare meatball mixture: Add crustless toast bread, garlic, parsley, oregano to a food processor and blend well. Transfer to a bowl with minced beef. Grate half an onion into the bowl. Add egg, salt, pepper, and olive oil. Mix everything thoroughly with your hands.
  2. Form and sauté meatballs: Form the mixture into small meatballs and place them on a cutting board. Heat olive oil and butter in a frying pan over medium-low heat. Add meatballs and gently sauté, turning occasionally until they develop a nice color but are not fully cooked.
  3. Prepare tomato sauce and simmer meatballs: Add grated tomatoes, dried oregano, granulated sugar, salt, and pepper to the pan with meatballs. Lower the heat and simmer gently for about 10 minutes until meatballs are cooked through and sauce thickens. Finely chop fresh basil and stir it in at the end.
  4. Assemble sandwiches: Cut ciabatta breads in half crosswise. Place meatballs with sauce on the bottom half. Sprinkle grated parmesan, add sliced mozzarella and basil leaves on top. Close sandwiches and place on a serving board.
  5. Serve: Drizzle sandwiches with fresh olive oil and freshly ground pepper if desired. Serve immediately.
