  3. green onions - 2-3 (thinly sliced whites and greens separated)
  4. garlic - 4 cloves (smashed and chopped)
  5. ginger - 1/2 teaspoon (minced)
  6. dried bonito flakes - 4g (ground into powder)
  7. Chinese chili bean paste - 1 tablespoon (for sauce)
  8. oyster sauce - 1 tablespoon (for sauce)
  9. sugar - 1 teaspoon (for sauce)
  10. mirin - 1 tablespoon (or sake, for sauce)
  11. black pepper - to taste (for sauce)
  12. noodles - 250g (fresh mazesoba noodles preferred)
  13. toasted sesame oil - 1 tablespoon (for noodles)
  14. chili oil - 1/2 tablespoon (for noodles)
  15. chicken bouillon powder - 1 teaspoon (for noodles)

Instructions

  1. Prep Vegetables: Cut garlic chives, slice green onions, smash and chop garlic, mince ginger.
  2. Make Sauce: Mix Chinese chili bean paste, oyster sauce, sugar, mirin, and black pepper.
  3. Cook Pork: Make aromatic oil with green onion whites, garlic, ginger, then add pork and cook. Add sauce and stir until pork is cooked.
  4. Cook Noodles: Boil noodles as per package instructions, then mix with sesame oil, chili oil, chicken bouillon powder, and black pepper.
  5. Assemble: Place noodles in a bowl, top with pork mixture, and add toppings like green onion greens and garlic chives. Finish with an egg yolk and tamper bits if desired.
