  8. CMC (Carboxymethyl cellulose) - 1 spoonful mixed with water (optional, for stabilizing)
  9. GMC (Gellan gum) - 1 spoonful mixed with water (optional, for stabilizing)

Instructions

  1. Reduce Milk: Start by reducing 1 liter of milk to half its quantity on slow heat.
  2. Prepare Nuts Mixture: Powder sugar and cardamom together. Then, coarsely grind pistachios, almonds, and cashew nuts. Add this nuts mixture to the condensed milk.
  3. Cook Milk Mixture: Cook the milk and nuts mixture for 1-2 minutes, bringing it to a boil before turning off the heat.
  4. Stabilize Kulfi Mixture: If using, mix CMC and GMC with a spoonful of water each to avoid lumps, then incorporate into the milk mixture. Alternatively, use slightly cooked corn flour.
  5. Prepare Mango Puree: Blend ripe or frozen mango pieces into a puree. Cook with sugar, then let it cool.
  6. Combine and Freeze: Mix the cooled mango puree with the milk mixture. Pour into kulfi molds and freeze overnight.
  7. Serve: Enjoy the mango kulfi as a cool treat on a hot day.
