Ingredients

  1. ripe mangoes - 2 medium (peeled, pulp only, remove seeds and fibers)
  2. passion fruit (calala) - 4-5 fruits (pulp extracted from shells)
  3. cold water - 4 cups (for blending and diluting)
  4. sugar - 1/2 cup (adjust to taste, moderate amount)
  5. salt - 1/8 teaspoon (preferably sea salt or pink salt, a pinch)
  6. ice cubes - as needed (for serving)

Instructions

  1. Prepare the fruits: Peel the ripe mangoes and remove all seeds and fibrous parts, keeping only the yellow pulp. Extract the pulp from the passion fruits (calala) by cutting them open and scooping out the contents.
  2. Blend mango pulp: Place the mango pulp into a blender. Add about 2 cups of cold water, sugar (1/2 cup), and a pinch of salt. Blend thoroughly until smooth.
  3. Combine with passion fruit pulp: Pour the blended mango mixture into a jug. Add the passion fruit pulp and stir well to combine.
  4. Adjust consistency and sweetness: If the drink is too thick, add additional cold water to dilute to your preferred consistency. Adjust sugar if needed.
  5. Serve chilled: Fill glasses with ice cubes and pour the mango-passion fruit refresco over the ice. Serve immediately and enjoy.
