  1. olive oil - 1 dl (extra virgin)
  2. onions - 2-4 (finely chopped)
  3. carrots - 2-4 (sliced)
  4. potatoes - 10-15 small (cut into cubes)
  5. garlic - 4-6 cloves (chopped)
  6. lentils - 200 g (uncooked)
  7. tomato paste - 2 tbsp
  8. chopped tomatoes - 400 g
  9. black pepper - 2 tsp
  10. sweet paprika - 2 tsp
  11. bouillon cubes - 2 (optional)
  12. water or vegetable broth - 1.5-2 liters

Instructions

  1. Prepare Lentils: Start by boiling water in a large pot. Rinse the lentils thoroughly and cook them for about 30 minutes until tender. Drain them in a colander.
  2. Sauté Vegetables: Heat olive oil in a large pan, and sauté onions, carrots, potatoes, and garlic until they are soft and fragrant.
  3. Add Spices and Tomatoes: Add tomato paste, black pepper, and sweet paprika to the sautéed vegetables. Let it simmer for 5 minutes. Stir in the chopped tomatoes and let it simmer.
  4. Combine and Cook: In a large pot, add a bit of olive oil, the cooked lentils, and the sautéed vegetables. Pour enough water or vegetable broth to cover the ingredients. Let the stew cook over low heat without a lid for 30-40 minutes, or until the potatoes are fully cooked.
