Ingredients

  1. octopus - 1.5 kg
  2. medium barley bee (golden choice) - 500 g
  3. onion - 1
  4. carrots - 2
  5. celery sticks - 2
  6. garlic clove - 1
  7. olive oil - 6 to 7 tablespoons (extra virgin)
  8. granulated sugar - 1 teaspoon
  9. bay leaves - 2
  10. cinnamon stick - 1
  11. allspice - 5 (nuts)
  12. tomato paste - 1 tablespoon
  13. ouzo - 100 g
  14. crushed tomatoes - 300 g
  15. water - 1 l
  16. salt - a pinch (to taste)
  17. freshly ground pepper - to taste (for serving)
  18. chopped parsley - to taste (for serving)

Instructions

  1. Prepare the Pressure Cooker: Heat the pressure cooker.
  2. Prepare Vegetables: Chop the onion, carrots, celery, and garlic.
  3. Sauté Vegetables: Add olive oil to the cooker, then add the vegetables and sauté. Add sugar, bay leaves, cinnamon, allspice, and stir.
  4. Prepare the Octopus: Clean the octopus, cut into large pieces, and add to the cooker. Stir.
  5. Add Liquids and Spices: Add ouzo, tomato paste, crushed tomatoes, and water. Stir.
  6. Cook: Close the lid, set the valve, and cook for 15 minutes once the pressure is reached.
  7. Add Barley: Release the pressure, open the lid, add the barley, and cook for another 10 minutes, stirring every two minutes.
  8. Season and Serve: Taste for salt, add freshly ground pepper, drizzle with fresh olive oil, garnish with chopped parsley, and serve.
