Ingredients

  1. potato - 1
  2. onion - 1
  3. garlic cloves - 3
  4. olive oil - 1/4 cup (vegetable oil can be used as an alternative)
  5. hot pepper seeds - 1 tablespoon (optional)
  6. dried coriander - 1 large tablespoon
  7. paprika - 1/2 tablespoon
  8. salt - a pinch (to taste)
  9. turmeric - less than 1/4 tablespoon
  10. green coriander - 3 tablespoons (chopped)
  11. lemon juice - from 1 lemon (from squeezed lemon)

Instructions

  1. Prepare Ingredients: Peel and slice the garlic cloves. Slice the potato and onion.
  2. Cook Garlic with Spices: In a small pot, heat olive oil and add hot pepper seeds, dried coriander, paprika, and garlic. Stir on medium heat until garlic is slightly colored, about 1.5 minutes.
  3. Add Potatoes: Reduce heat to medium-low and add sliced potatoes. Stir and cover the pot, cooking slowly and stirring occasionally. Season with a pinch of salt.
  4. Add Onions: Once potatoes are nearly cooked, add sliced onions on top, breaking them up with hands. Cover and cook until onions are soft.
  5. Final Seasoning: Add a pinch of turmeric and the chopped green coriander. Stir-fry briefly to mix.
  6. Finish with Lemon Juice: Squeeze in the juice of one lemon, stir, and then turn off the heat immediately to avoid boiling the lemon juice.
  7. Serve: Transfer the potato stir-fry to a serving dish and enjoy.
