Ingredients

  1. bitter gourds - 500 gm (washed and cut)
  2. mustard oil - watch the video to see (for frying)
  3. onion - 3 (chopped)
  4. tomatoes - 2 (boiled)
  5. raw mango - 1 (pulp)
  6. salt - watch the video to see (to taste)
  7. red chili powder - 1/2 tsp (for spice)
  8. Kashmiri red chili powder - 1/2 tsp (for color)
  9. coriander powder - 1 tsp (for flavor)
  10. garam masala - 1/2 tsp (for seasoning)
  11. turmeric powder - 1/2 tsp (for color and health)
  12. coriander leaves - watch the video to see (for garnish)

Instructions

  1. Wash Bitter Gourds: Wash the bitter gourds thoroughly in water to remove soil.
  2. Cut Bitter Gourds: Cut the bitter gourds in half and remove the seeds.
  3. Prepare Bitter Gourds: Add salt, turmeric powder, and lemon juice to the bitter gourds and mix well. Let sit for 15-20 minutes.
  4. Squeeze Water: Squeeze out excess water from the bitter gourds.
  5. Fry Bitter Gourds: Heat mustard oil in a pan and fry the bitter gourds on high heat until they turn red and soft, about 14-15 minutes.
  6. Cook Tomatoes: In the same pan, add boiled tomatoes and cook for 4-5 minutes until the water dries up.
  7. Add Onions and Spices: Add chopped onions, green chilies, and spices. Cook for 2-3 minutes until onions are pink.
  8. Finish Cooking: Cover and cook for 5-7 minutes. Add raw mango pulp or mango powder and mix well.
  9. Serve: Garnish with coriander leaves and serve with paratha or roti.
