Wash Bitter Gourds: Wash the bitter gourds thoroughly in water to remove soil.
Cut Bitter Gourds: Cut the bitter gourds in half and remove the seeds.
Prepare Bitter Gourds: Add salt, turmeric powder, and lemon juice to the bitter gourds and mix well. Let sit for 15-20 minutes.
Squeeze Water: Squeeze out excess water from the bitter gourds.
Fry Bitter Gourds: Heat mustard oil in a pan and fry the bitter gourds on high heat until they turn red and soft, about 14-15 minutes.
Cook Tomatoes: In the same pan, add boiled tomatoes and cook for 4-5 minutes until the water dries up.
Add Onions and Spices: Add chopped onions, green chilies, and spices. Cook for 2-3 minutes until onions are pink.
Finish Cooking: Cover and cook for 5-7 minutes. Add raw mango pulp or mango powder and mix well.
Serve: Garnish with coriander leaves and serve with paratha or roti.
