Ingredients

  1. finely minced meat - 750 grams (preferably fatty meat)
  2. lamb fat - 50 grams (adds flavor and moisture)
  3. onion - 1 medium (grated finely)
  4. parsley - 2 tablespoons (finely chopped)
  5. salt - to taste (for seasoning)
  6. seven spices - 1/2 teaspoon (Lebanese spice blend)
  7. cinnamon - 1/4 teaspoon
  8. paprika - 1/2 teaspoon
  9. tomato - 1 medium (cut into large cubes for grilling)
  10. onion - 1 medium (cut into large cubes for grilling)
  11. green pepper - 1 stick or similar (cut for grilling)
  12. salt - sprinkle (for vegetables)
  13. black pepper - sprinkle (for vegetables)
  14. hot pepper pods - 3 pods (optional, for grilling)
  15. parsley - half bunch (for bawaz salad)
  16. onion - 1 medium (cut into strips for bawaz salad)
  17. sumac - 1 tablespoon (for bawaz salad)
  18. seven spices - small pinch (for bawaz salad)
  19. salt - to taste (for bawaz salad)
  20. garlic clove - 1 (crushed with salt for tarator sauce)
  21. water - half cup (for tarator sauce)
  22. lemon juice - half cup (for tarator sauce)
  23. tahini - 1 cup (for tarator sauce)

Instructions

  1. Prepare the Kofta Mixture: Place the finely minced meat and lamb fat in a mixing container. Grate one onion finely and add it to the meat. Add two tablespoons of finely chopped parsley. Season with salt to taste, 1/2 teaspoon seven spices, 1/4 teaspoon cinnamon, and 1/2 teaspoon paprika. Knead the mixture thoroughly to combine all ingredients well.
  2. Shape and Score the Kofta: Line a baking tray with butter paper. Spread the kofta mixture evenly on the tray to an even thickness. Wet your hands with water to smooth the surface. Using a cutter, skewer, or knife, score the kofta into desired shapes to facilitate serving.
  3. Prepare Vegetables for Grilling: Cut one tomato and one onion into large cubes. Cut the green pepper similarly. Place the vegetables next to the kofta on the tray. Sprinkle lightly with salt and black pepper. Optionally add three hot pepper pods and mix with the vegetables.
  4. Bake the Kofta and Vegetables: Preheat the oven to 180°C (356°F) with heat from above and below (conventional). Place the tray in the oven and bake until the kofta and vegetables are cooked through and nicely colored.
  5. Prepare Bawaz Salad: Chop half a bunch of parsley finely. Cut one onion into strips and add on top of the parsley. Add one tablespoon sumac, a small pinch of seven spices, and salt to taste. Mix well.
  6. Prepare Tarator (Tahini) Sauce: Crush one garlic clove with a pinch of salt. In a bowl, combine 1 cup tahini, 1/2 cup lemon juice, and 1/2 cup water. Whisk continuously until the sauce is smooth and has a loose but creamy consistency.
  7. Serve: Serve the baked kofta and grilled vegetables with the bawaz salad and tarator sauce. Add pickles and bread on the side. Optionally, roll the kofta, vegetables, salad, and sauce in the bread for a delicious meal.
