Ingredients

  1. Whole wheat pita bread - 2 (cut into square cubes)
  2. Olive oil - 6-7 tablespoons (for sautéing and dressing)
  3. Garlic - 1 tablespoon (finely chopped)
  4. Sumac powder - 1/2 teaspoon (for flavor)
  5. Himalayan pink salt - 3/4 teaspoon (to taste)
  6. Iceberg lettuce - 5-6 leaves (leaves torn)
  7. Ice chilled water - as required (for soaking)
  8. Mint leaves - 1 handful (handful, chopped)
  9. Fresh coriander - 1 handful (handful, chopped)
  10. Pink radish - 3-4 (sliced)
  11. Spring onion - 1 stalk (leaves chopped)
  12. Cherry tomatoes - 3-4 (cut into quarters)
  13. Lettuce leaves - 1 bunch (roughly chopped)
  14. Cucumber - 1 medium (sliced)
  15. Black olives - 5-6 (sliced)
  16. Extra virgin olive oil - 4 tablespoons (for dressing)
  17. Vinegar - 1 tablespoon (for dressing)
  18. Lemon juice - 1 tablespoon (for dressing)
  19. Honey - 1 tablespoon (for dressing)
  20. Cinnamon powder - 1/4 teaspoon (for dressing)
  21. Cumin seeds - 1/4 teaspoon (roasted & crushed for dressing)
  22. Black pepper powder - 1/4 teaspoon (to taste for dressing)

Instructions

  1. Prepare Pita Bread: Cut whole wheat pita bread into square cubes. In a frying pan, add pita bread, olive oil, garlic, sumac powder, and pink salt. Mix well and sauté on medium flame until golden and crispy (4-5 minutes).
  2. Soak Iceberg Lettuce: Take out Iceberg leaves, tear with hands, and soak them in iced chilled water for 10-15 minutes.
  3. Prepare Vegetables: Chop mint leaves and fresh coriander. Slice pink radish, chop spring onion, cut cherry tomatoes into quarters, and roughly chop lettuce leaves.
  4. Slice Cucumber and Olives: Cut cucumber and black olives into slices.
  5. Combine Ingredients: In a bowl, add whole wheat pita bread and all prepared vegetables.
  6. Prepare Salad Dressing: In a small bottle, add olive oil, vinegar, lemon juice, honey, cinnamon powder, sumac powder, cumin seeds, black pepper powder, and pink salt. Close the lid and shake well.
  7. Dress Salad: Pour the prepared dressing over the salad, toss well, and serve!
