Ingredients

  1. lamb leg and arm - 2 kg (cut into portions without bone)
  2. green peppers - 2
  3. red peppers - 2
  4. onions - 2
  5. rosemary sprigs - 4
  6. beef knuckle cubes - 3
  7. olive oil - 100 g
  8. white wine vinegar - 100 g
  9. garlic cloves - 4
  10. rosemary sprigs (for marinade) - 4-5
  11. plain mustard - 100 g

Instructions

  1. Prepare the Marinade: Blend garlic, vinegar, olive oil, rosemary, and beef knuckle cubes to create the marinade.
  2. Marinate the Lamb: Pour the marinade over the lamb, ensuring it's well coated. Let it marinate.
  3. Prepare Vegetables: Cut onions into large pieces and prepare peppers by removing seeds and cutting into large pieces.
  4. Add Mustard to Meat: Add mustard to the marinated lamb and mix well.
  5. Assemble Kontosouvli: Alternate meat and vegetables on metal rods. Wrap with parchment paper and then aluminum foil.
  6. Bake: Place on a baking sheet with a grill. Bake at 180°C for 2.5 hours, then uncover and bake for an additional 15-30 minutes until nicely colored.
  7. Serve: Serve with souvlaki pitas, French fries, tzatziki, and lemon slices.
