Ingredients

  1. meat - 1 kilo (cut into pieces)
  2. lamb fat - to taste (optional, for added flavor)
  3. onion - 1 large (peeled and cut into chunks)
  4. tomatoes - 2 large (washed and cut)
  5. cardamom - 1/2 teaspoon
  6. cinnamon - 1/2 teaspoon
  7. seven spices - 1/2 teaspoon
  8. salt - to taste (to taste)
  9. Greek beshtaka - to taste (crushed)
  10. vegetable oil - as needed
  11. apple cider vinegar - 1/2 cup (natural)

Instructions

  1. Prepare Vegetables: Cut onions and tomatoes into chunks and place them in a roasting dish.
  2. Season: Add cardamom, cinnamon, seven spices, salt, and crushed Greek beshtaka to the vegetables.
  3. Mix with Vinegar and Oil: Pour vegetable oil and apple cider vinegar over the seasoned vegetables and mix well.
  4. Add Meat: Place the meat on top of the seasoned vegetables and mix thoroughly.
  5. Marinate: Allow the mixture to marinate in the refrigerator for 2-3 hours.
  6. Roast: Roast in the oven until the meat is cooked through and vegetables are tender.
