Season: Season with black pepper, cayenne pepper (optional), and sumac. Add chopped parsley and stir.
Finish with Lemon Juice: Finish by squeezing lemon juice over the dish or using pomegranate molasses. Turn off the heat.
Serve: Serve the kofta with potatoes hot, with or without bread, and optionally with a salad.
