Ingredients

  1. yellow rice - 3 cups (authentic Spanish rice)
  2. water - 6 and 3/4 cups (for cooking rice)
  3. butter - 3 tablespoons (for flavor)
  4. chicken thighs - 2 small (leftover KFC, skin removed)
  5. onion - 1 (chopped)
  6. celery - 1 stalk (chopped)
  7. bell pepper - 1 (chopped)
  8. carrot - 1 (grated)
  9. garlic - 2 cloves (rough chopped)
  10. parsley - 1/4 cup (rough chopped)
  11. thyme - 1 teaspoon (fresh leaves)

Instructions

  1. Prepare Ingredients: Chop the onion, celery, bell pepper, and garlic. Grate the carrot and chop the parsley.
  2. Cook Vegetables: In a pot, melt butter and add onion, celery, bell pepper, and garlic. Sweat down for a few minutes.
  3. Add Chicken: Add chopped KFC chicken and thyme to the pot, stir to combine.
  4. Add Rice: Make a hole in the center of the pot, add the rice, and stir to coat.
  5. Add Water: Pour in 6 and 3/4 cups of water, bring to a boil, then reduce to a simmer.
  6. Cook Rice: Cover and let cook for 20-25 minutes until water is absorbed.
  7. Fluff Rice: After cooking, let sit for 10-15 minutes, then fluff with a fork.
