Ingredients

  1. Jasmine rice - 300g (300g)
  2. Kombu - 4g (or MSG as substitute)
  3. Water - 370ml (for cooking rice)
  4. Soy sauce - 1 tsp (5ml) (for rice seasoning)
  5. Oyster sauce - 1 tsp (10g) (for rice seasoning)
  6. Salt - 1/4 tsp (1.5g) (for rice seasoning)
  7. Onion - 150g (measured with skin on)
  8. Carrot - 120g (measured with skin on)
  9. Green onion - 70g
  10. Garlic - 1/2 tsp (4g) (for garlic paste)
  11. Ginger - 1/2 tsp (4g) (for garlic paste)
  12. Toban Djan (Chilli bean sauce) - 1/2 tsp (4g) (for garlic paste)
  13. Neutral oil - 1 tsp (5ml) (for cooking beef)
  14. Beef mince (18% fat) - 250g
  15. Salt - 1 pinch (for seasoning beef and vegetables)

  17. Soy sauce - 1/2 tbsp (7.5ml) (for beef seasoning)
  18. Sake - 1/2 tbsp (7.5ml) (for beef seasoning)

Instructions

  1. Prepare rice and seasoning: Rinse jasmine rice and place it in the rice cooker. Add kombu (or MSG), water, soy sauce, oyster sauce, and salt. Do not mix after adding water.
  2. Prepare vegetables: Peel and chop onion, carrot, and green onion. Prepare garlic paste by mixing garlic, ginger, and toban djan.
  3. Cook beef: Heat neutral oil on high heat in a pan. Add beef mince seasoned with a pinch of salt and black pepper. Cook on high heat until fat becomes cloudy, then reduce to medium heat and cook for about 1 minute. Strain the fat and keep the beef oil for cooking vegetables.
  4. Cook vegetables: Using the beef oil, cook onion with a pinch of salt on medium-high heat for 2-3 minutes. Add carrot with a pinch of salt and cook for about 1 minute. Add green onion and cook for 20-30 seconds. Add water if pan gets dry to prevent burning. Do not stir the rice in the cooker to avoid undercooking.
  5. Combine and cook rice: Add cooked beef and vegetables on top of the rice in the rice cooker. Set the rice cooker to 'white rice' mode and cook for 30-40 minutes.
  6. Rest and serve: After cooking, keep the rice warm in the cooker for at least 10 minutes before opening the lid to ensure it is fully cooked. Serve with optional toppings such as cheese, fried egg, sriracha, or nori sheet.
