  9. fresh basil - 1/4 cup (1/4 cup chopped)
  10. whole milk low moisture mozzarella - watch the video to see (cut into chunks)

Instructions

  1. Brown the Sausage: Start by browning some spicy Italian sausage in a little bit of oil. Set that aside.
  2. Sauté Onions: Sauté the onions in the sausage fat until translucent.
  3. Add Garlic and Tomatoes: Add the garlic, sundried tomatoes, and any optional ingredients like oregano or anchovy paste.
  4. Add Crushed Tomatoes and Basil: Stir in the crushed tomatoes and chopped fresh basil.
  5. Simmer: Add the sausage back into the pan, mix well, and let everything simmer for 20 to 30 minutes until the flavors have melded and the sauce has reached the right consistency.
  6. Add Mozzarella and Eggs: Add chunks of mozzarella. Lower the heat, cover, and stew. Check for egg consistency after 5 minutes and remove from heat when nearly done.
