Ingredients

  1. morita chiles - 2 (cleaned and seeded)
  2. pasilla chiles - 2 (cleaned and seeded)
  3. green tomatoes - 3 (for the sauce)
  4. onion - 1 (small piece)
  5. garlic - 1 (clove)
  6. salt or powdered chicken broth - 1 tablespoon (to taste)
  7. refried beans - 1 cup (for layering)
  8. corn tortillas - 2 (preferably day-old)
  9. ham - 2 slices (sliced)
  10. fresh cheese - 1/4 cup (crumbled)
  11. avocado - 1 (sliced)

Instructions

  1. Hydrate Chiles: In hot water, add morita chiles and let them hydrate for 5 minutes.
  2. Add Pasilla Chiles and Tomatoes: Add pasilla chiles and green tomatoes to the water. Once tomatoes change color, turn off the heat.
  3. Prepare Sauce: In a blender, combine cooked green tomatoes, chopped onion, garlic, morita chiles, pasilla chiles, and some water. Blend until smooth.
  4. Cook Sauce: In hot oil, add the blended sauce and season with salt or powdered chicken broth. Cook for about 20 minutes.
  5. Fry Tortillas: Fry corn tortillas in hot oil until crispy.
  6. Assemble Dish: Layer refried beans on a tortilla, add a slice of ham, a fried egg, drizzle with sauce, and top with crumbled cheese and avocado.
