Instructions

  1. Prepare the couscous: Spread semolina flour out in a tray. Mix salt and water in a spray bottle and shake well. Spray a little at a time over the semolina powder and gently rub in circular motions to form tiny couscous balls.
  2. Sift and steam couscous: Sift the couscous to ensure even grains. Pour into a cotton or muslin-lined sieve. Place over boiling water and cook for 10 to 15 minutes, fluffing up at intervals.
  3. Cook the aromatics: Heat oil in a pan and add diced onions. Cook until translucent. Stir in minced garlic and grated ginger.
  4. Cook the chicken with spices: Add cubed chicken to the pan along with salt, black pepper, curry powder, rosemary, thyme, buan powder, and paprika. Cook until the chicken is browned.
  5. Add vegetables and simmer: Stir in diced tomatoes, bell peppers, and scotch bonnets. Simmer for a few more minutes.
  6. Combine couscous and garnish: Mix in the steamed couscous until everything is perfectly coated. Stir in green onions and garnish with parsley.
