Ingredients

  1. ground beef - 600 g (lean ground beef)
  2. onion - 1/2 (chopped)
  3. garlic cloves - 2 (chopped)
  4. ripe tomatoes - 3 (very ripe, chopped)
  5. chilies - 2 (combination of serrano and jalapeño, chopped; adjust to taste)
  6. cumin - pinch (whole cumin seeds, ground)
  7. clove - 1 (whole clove, ground)
  8. black pepper - pinch (whole peppercorns, ground)
  9. salt - to taste (used for seasoning and to help tomatoes release juice)
  10. cabbage - watch the video to see (sliced, washed)
  11. spinach - watch the video to see (fresh, washed)
  12. oil - very little (for frying)
  13. refried beans - to serve (optional accompaniment)
  14. corn tortillas - to serve (warm and freshly made)

Instructions

  1. Prepare spices: Grind a pinch of cumin seeds, one clove, and some black peppercorns together in a molcajete or spice grinder.
  2. Cook ground beef: Heat a pan over medium heat with very little oil. Add ground beef, season with salt and pepper, and fry while stirring constantly to break up the meat.
  3. Add garlic: Add chopped garlic to the meat and continue stirring to infuse flavor.
  4. Add onion and cabbage: Add chopped onion and sliced cabbage to the pan. Stir and cook over medium heat for about 5 minutes until cabbage softens.
  5. Add tomatoes, chilies, and spices: Add chopped ripe tomatoes, chopped chilies, and the ground spices. Season with salt to taste. Stir and cook for another 5 minutes over medium heat until the mixture is well seasoned and tomatoes release their juice.
  6. Add spinach and finish cooking: Add washed fresh spinach, stir, reduce heat to low, cover the pan, and cook until spinach is wilted and cooked through.
  7. Serve: Serve the stew hot accompanied by refried beans and warm corn tortillas.
