Ingredients

  1. Peach - 700 g (cut into cubes and deseeded)
  2. Water - 1 cup (for blending peaches)
  3. Sugar - 600 g (for syrup)
  4. Water - 2.5 cups (for syrup)
  5. Lemon juice - 1/4 cup (freshly squeezed)
  6. Citric acid (Tatri) - 1/4 tsp (food grade)
  7. Himalayan pink salt - 1/2 tsp (or to taste)
  8. Ice cubes - watch the video to see (for serving)
  9. Peach slices - watch the video to see (for garnish)
  10. Mint leaves (Podina) - watch the video to see (for garnish)

Instructions

  1. Prepare peaches: Cut peaches into cubes and deseed them.
  2. Blend and strain peaches: In a blending jug, add peaches and 1 cup water, blend well, then strain the mixture and set aside.
  3. Make sugar syrup: In a wok, add sugar and 2.5 cups water, turn on the flame, mix well and cook until the sugar is completely dissolved.
  4. Combine peach mixture with syrup: Add the strained peach mixture to the syrup and mix well.
  5. Add flavorings and cook: Add lemon juice, citric acid, and Himalayan pink salt. Mix well and cook on medium flame for 8-10 minutes.
  6. Cool and store: Let the peach squash cool completely. It can be stored in the refrigerator for up to 1 month. Yield is approximately 2 liters.
  7. Prepare serving drink: In a jug, add 3 cups cold water and 1 cup peach squash, mix well.
  8. Serve: In a serving glass, add ice cubes, peach slices, the prepared peach drink, and mint leaves. Serve chilled.
