  3. fresh ginger - 1 inch piece (1-inch (2.5 cm) piece, crushed)
  4. cloves - 4 cloves (4 whole cloves)
  5. cardamom pods - 4 pods (4 pods, crushed)
  6. cinnamon stick - 1 stick (1 small stick)
  7. loose leaf black tea - 2 tbsp (2 tablespoons)
  8. coconut sugar - 1-2 tsp (1-2 teaspoons or sweetener of choice, to taste)

Instructions

  1. Simmer spices: In a saucepan over medium heat, add boiling water, crushed fresh ginger, cloves, crushed cardamom pods, and cinnamon stick. Let the spices simmer for 5 minutes to release their flavors.
  2. Add black tea: Stir in the loose leaf black tea and allow the mixture to boil for another 2 minutes, letting the tea infuse deeply with the spices.
  3. Add milk and heat: Add the milk to the saucepan. Stir occasionally and bring the mixture to a gentle boil. Adjust heat as needed to prevent the milk from boiling over.
  4. Sweeten and simmer: Add coconut sugar or preferred sweetener. Simmer the chai for 1 more minute, stirring gently to blend flavors.
  5. Strain and serve: Strain the chai into your favorite cup, discarding the spices and tea leaves. Serve warm.
