Prepare Chicken Mixture: Put cubed chicken breast, one beaten egg, and a teaspoon of salt into a food processor and blend well. For a spicy version, add 2 tablespoons of your favorite hot sauce.
Form Nuggets: With about a 1 tablespoon scoop, roll the mixture in some corn starch, then shape them and remove any excess by tapping.
Freeze Nuggets: Let the nuggets harden in the freezer for 1 hour to make them easier to work with.
Prepare Batter: Add seasoning to 1 cup of self-rising flour, then mix with 1 and 1/2 cups of cold water.
Batter and Fry: Dunk the chicken nuggets in the batter, remove any excess, and deep fry at 390°F until they're golden and crispy.
