Caramelize Bananas: Cut 2 ripe bananas into slices. Heat 1-2 tablespoons olive oil in a frying pan over high heat. Add banana slices and cook until caramelized, then add 1 tablespoon honey at the end to enhance caramelization. Stir gently and transfer to a bowl.
Prepare Remaining Bananas: Cut 1 ripe banana into small pieces for texture in the batter. Cut the last banana in half for topping.
Mix Wet Ingredients: In the bowl with caramelized bananas, add 120 g olive oil, 150 g honey, and two eggs. Mix well to combine.
Add Dry Ingredients: Add a pinch of salt, 150 g all-purpose flour, 1 teaspoon baking powder, and vanilla extract to the wet mixture. Mix until just combined.
Add Granola and Banana Pieces: Fold in 200 g of Healthy Habits granola and the chopped banana pieces into the batter.
Prepare Baking Pan: Grease a 10x30 cm loaf pan with olive oil and dust with flour.
Assemble and Top: Pour the batter into the prepared pan. Place the halved banana pieces on top and sprinkle 50 g granola over the surface for extra texture.
Bake: Preheat the oven to 160°C (320°F). Bake the banana bread for 50 to 60 minutes until cooked through and golden on top.
Cool and Serve: Allow the banana bread to cool in the pan before slicing. Serve as a snack or breakfast treat.
