  4. Healthy Habits granola with peanut butter and dark chocolate - 250 g (200 g for batter, 50 g for topping)
  5. eggs - 2 eggs (two medium eggs)
  6. salt - pinch (a pinch)
  7. all-purpose flour - 150 g plus extra (150 g plus extra for dusting pan)
  8. baking powder - 1 teaspoon (1 teaspoon)

Instructions

  1. Caramelize Bananas: Cut 2 ripe bananas into slices. Heat 1-2 tablespoons olive oil in a frying pan over high heat. Add banana slices and cook until caramelized, then add 1 tablespoon honey at the end to enhance caramelization. Stir gently and transfer to a bowl.
  2. Prepare Remaining Bananas: Cut 1 ripe banana into small pieces for texture in the batter. Cut the last banana in half for topping.
  3. Mix Wet Ingredients: In the bowl with caramelized bananas, add 120 g olive oil, 150 g honey, and two eggs. Mix well to combine.
  4. Add Dry Ingredients: Add a pinch of salt, 150 g all-purpose flour, 1 teaspoon baking powder, and vanilla extract to the wet mixture. Mix until just combined.
  5. Add Granola and Banana Pieces: Fold in 200 g of Healthy Habits granola and the chopped banana pieces into the batter.
  6. Prepare Baking Pan: Grease a 10x30 cm loaf pan with olive oil and dust with flour.
