Instructions

  1. Prepare caramel base: Melt raw sugar and butter together and pour the caramel mixture into a Pullman loaf pan.
  2. Arrange bananas: Cut bananas lengthwise and arrange them tightly sideways on top of the caramel in the loaf pan.
  3. Bake caramelized bananas: Cook in the oven for 20 minutes and then let cool completely.
  4. Make banana puree mixture: Blend ripe bananas, banana scraps, soft dried bananas, sugar, and a splash of dark rum until smooth.
  5. Prepare chocolate cake batter: Cream butter and sugar together. Add one egg, then add a quarter of the sifted powders. Incorporate the banana puree mixture, then add the remaining sifted powders and the second egg. Finally, fold in walnuts and chocolate discs.
  6. Assemble and bake: Fill the prepared Pullman loaf pan over the caramelized bananas with the chocolate cake batter. Bake in the oven for 1 hour and 10 minutes.
  7. Cool and serve: Let the bread cool completely before slicing and serving.
